Everyone associated with the San Jose Chamber Orchestra or the Choral Project show up at First Presbyterian Church in Palo Alto 7PM to rehearse for the concerts on Dec 21 and 22.

Preserved limes

Preserved limes use the same recipe as preserved lemons.

1. Go out to your lime tree and pick 8-10 limes. Wash them and scrub with a brush.
2. Cut each lime in almost in quarters, but leave them attached.
3. Stuff each lime with 1T Kosher salt and squish it into a quart Mason jar.
4. Keep putting in limes until the jar is full.
5. Add cinnamon sticks, bay leaves, whole spices, and dried red peppers to the jar.
6. Top off with extra lime juice.
7. Rotate the jars every 12 hours for a wee
